Coconut oil has been demonized in the past because it contains saturated fat. In fact, coconut oil is one of the richest sources of saturated fat known to man, with almost 90% of the fatty acids in it being saturated (1).

As with all things, there are varying degrees of quality in coconut oil. Here are some factors to look for. A good quality coconut oil should be white when solid, clear when melted, not discolored and should smell fresh and “coconutty”, it should not smell like old rancid fat. great to use as cooking oil. I replaced E.V. Olive Oil with coconut oil, an E.V. Olive Oil is just fine but coconut oil has a higher smoke point and is the healthiest oil you can cook with.
