Carrots Help The Eyes: Carrots are a rich source of antioxidants that protect the eyes from the oxidative stress of free radicals. Beta carotenes give plants their orange coloring and carrots are high in these substances. The body converts beta carotene into vitamin A which is very important for eyesight. A deficiency of vitamin A is linked with night blindness which can be reversed as reported in one case study. [1]
Tomatoes Improve Heart Health: A review of multiple studies have found that tomatoes provide multiple cardioprotective functions including a reduction in low-density lipoprotein (LDL) cholesterol, homocysteine, platelet aggregation, and blood pressure. [2] Tomatoes are rich in lycopene that helps lower the levels of LDL or ‘bad’ cholesterol in the blood. Other components in tomatoes like vitamin B and E, antioxidants such as flavonoids help boost heart health.
Walnut Enhances Brain Function: Oxidative stress and inflammation have been reported as the main cause for poor cognitive functioning in old age. Walnuts are a rich source of nutrients and bioactive phytochemicals that can boost brain health even with an increase in age. The antioxidants present in walnuts can reduce oxidative stress and inflammation in the brain, thus preventing brain disorders. [3]
Beans Help To Maintain Kidney Function: Several studies have reported that beans contain a high amount of anthocyanins. [4] Anthocyanins are phytochemicals having antioxidant properties which may help protect kidneys from free radical damage. Beans may thus help in the healing process and maintain the normal functioning of kidneys.
