Check out this amazing bread recipe we just discovered at RestlessChipotle.com! Note that although the photo shows two loaves, the ingredients in the recipe are enough for two (if you are making more loaves you can “scale up” the quantities proportionately). It has just a touch of sweetness from the addition of honey – but it is not so sweet that it cannot be used to make sandwiches.
One of the interesting things about this recipe is the inclusion of real buttermilk. This is an ingredient from the old days, especially popular in the Southern USA – and the real thing may be difficult to obtain in many places. You can buy a commercially-available buttermilk (which might have some dubious ingredients i.e. modified corn starch (GMO!) and locust bean gum) – so for ultimate results you might want to make your own.
Making buttermilk is not difficult but does require a starter culture. Fortunately, RestlessChipotle.com has given instructions for the best ways to do this step also.

I’m guessing that the popularity of these recipes is a “sign of the times”: People are clearly really interested in making their own bread – perhaps it’s a kind of reaction to a world with too much artificial – and people are getting caught up in the sentiment (not a bad thing IMO).
