We’ve just discovered a great tutorial for 5 different herbal infusions using honey. According to the tutorial, these simple recipes will keep for up to 6 months and are a valuable home remedy to keep on hand – or even just use day to day. What’s even better is that you don’t have to be feeling poorly to enjoy them! 😉

I’ve written at length about the benefits of raw honey – and for those who are not aware of the benefits of raw honey, or the big difference in quality between various honeys, I would recommend to check out my original raw honey post which has much information.

As for the herbs and spices included in these recipes – we’ve also written about some of these in full, glorious detail: Cinnamon, Ginger, and Clove. One thing to note about honey – it is better when it has not been heated. This is because the delicate enzymes that are part of the nutritional benefit are damaged by heat. This is one of the reasons for the preference for raw honey. So you might wish to experiment with creating these honeys without using heat.

Here are a few “bonus” ideas for the adventurer:

Rosemary honey makes a fantastic glaze for salmon or chicken.

Lavender or rose honey works well with tea.

Hazelnuts in honey is a delicious delicacy found in Italian delicatessens. You could also try walnuts or other nuts in honey…. it’s not so much a ‘herbal infusion’ but hey, it’s a real gourmet treat. 🙂

  2. Heating honey is not good, when heating honey it changes its chemical structure and toxins are released during this proces. You make your own poison if you heat honey.
