We discovered an awesome recipe for a healthful lavender lemonade that is sure to be a hit with our readers! The tutorial also gives some great tips on growing lavender and other ways to use it. The link follows after our introduction to the topic, as per usual.


Lavender is one of the world’s most popular herbs. It’s been in use since ancient times on account of its fragrance and therapeutic qualities. It’s also a wonderful plant for bees. Recently, many people have been (re)discovering culinary ways to use lavender. I tried some lavender ice cream recently and it was amazing!

One of my favorite uses of lavender? As a sleep aid. Here’s a simple experiment that you might try: At bedtime, inhale some of the aroma of pure lavender and see if it helps you fall asleep better. A few easy ways to do this 1) leave open a regular small bottle of lavender essential oil on the bedside table, close enough so that you can catch a scent that is noticeable but not overpowering Putting the essential oil bottle on a plate is ideal, so that if it does get knocked over, you will not get oil on the furniture! 2) use a diffuser or oil burner with a few drops of lavender. 3) Put some real lavender flowers under the pillow or somewhere near your head so that you can smell the fragrance. Many people have found that the aroma of lavender works its magic and helps with sleep and relaxation. It certainly works on me! Together with the hydrating properties of this thirst-quenching drink, give it a dry next time you are stressed or have a headache.

The lavender lemonade recipe calls for a lot of honey and of course raw, local honey is advised. You can of course adjust the sweetness of your beverage by adjusting the amount of honey. Another thing that I would be interested to know is if someone can make the recipe without using boiling water to dissolve the honey. The reason for this is that honey is very temperature sensitive, and some of the nutritional elements are destroyed by heat. Anyone any thoughts on this?


Note – the color in the photo is influenced by the glassware and that the lemonade will not come out this color. However, you can influence the color of your drinks by adding berry juice – so why not experiment with blackberry, cherry or blackcurrant and see if you can create a similar effect? 🙂

    If you blend the lemon juice and honey in a blender before adding your water (and then blend) the honey stays suspended. 🙂

    Hi on your question about if someone can make the recipe without using boiling water?! The only other way possible to me would be by getting a big sun tea jar and doing it by the sunlight! The same way sun tea is made. If there is another possible way besides putting it in the sunlight, Please share. I would like to know! Thanks, s Sincerely Arleen Young

    How about mixing the honey and water and heating it just enough for the honey to dissolve? You need warm water for the lavender to steep, and it shouldn’t take much heat to dissolve the honey.

    Bear in mind that all honey sold out of the comb has been heated. Beekeepers heat the comb until the wax melts in order to release the honey for bottling. The wax can then be reused.

    I do not think that is correct, because that’s not how we used to do it. We used to slice the tops off the combs with a special knife and then put them in a spinner, a type of centrifuge and just collect the honey from the bottom. No heat whatsoever.

    To Solve for NOT BOILING the Honey. MIX LEMON JUICE AND HONEY TOGETHER. The honey liquefies because of the acid. Also adding the lavender to the lemon juice honey mixture and letting it sit a few days will draw out the phytochemicals, minerals and aromas. Then mix with water. The honey may slightly and I do mean slightly separate when refrigerated but a quick stir is all that is needed.

    This process is also known as making an oxymel before adding the water. You can make honey lemon ginger oxymel that is great for fighting the flu and calming the stomach.

    An easy way to avoid “boiling” the honey can be done by just adding the honey later, when the lavender “tea” gets from hot to warm and the honey will still get dissolved with a little stirring.
